Ingredients
- 📌 1 1/2 cups all-purpose flour
- 📌 1 teaspoon baking powder
- 📌 1/4 teaspoon salt
- 📌 1/2 cup unsalted butter, softened
- 📌 1 cup granulated sugar
- 📌 2 large eggs
- 📌 1/2 cup sour cream
- 📌 1/4 cup key lime juice
- 📌 2 teaspoons key lime zest
- 📌 1 teaspoon vanilla extract
- Cream Cheese Frosting:
- 📌 8 ounces cream cheese, softened
- 📌 1/2 cup unsalted butter, softened
- 📌 3 cups powdered sugar
- 📌 2 tablespoons key lime juice
- 📌 1 teaspoon key lime zest
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the eggs, one at a time, beating well after each addition.
- Stir in the sour cream, key lime juice, key lime zest, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Be careful not to overmix.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- While the cake is cooling, prepare the cream cheese frosting. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, key lime juice, and key lime zest, beating until the frosting is light and fluffy.
- Once the cake is completely cooled, spread the cream cheese frosting evenly over the top and sides of the cake.
- Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld and the frosting to set.
