  • 📌 1/2 cup unsalted butter, softened
  • 📌 3 cups powdered sugar
  • 📌 2 tablespoons key lime juice
  • 📌 1 teaspoon key lime zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Stir in the sour cream, key lime juice, key lime zest, and vanilla extract until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Be careful not to overmix.
  7. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. While the cake is cooling, prepare the cream cheese frosting. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
  10. Gradually add the powdered sugar, key lime juice, and key lime zest, beating until the frosting is light and fluffy.
  11. Once the cake is completely cooled, spread the cream cheese frosting evenly over the top and sides of the cake.
  12. Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld and the frosting to set.
