Lemon Blueberry Lasagna

Ingredients

• 1 package (8 oz) cream cheese, softened
• 1 cup ricotta cheese
• 1/2 cup sugar
• 2 tablespoons lemon juice
• 1 tablespoon grated lemon zest
• 1 cup fresh or frozen blueberries
• 9 no-boil lasagna noodles
• 1 cup shredded mozzarella cheese
• 1 cup graham cracker crumbs
• 2 tablespoons melted butter


Instructions

• Step 1: Preheat your oven to 375°F (190°C). In a medium bowl, beat the cream cheese until smooth. Add the ricotta cheese, sugar, lemon juice, and lemon zest, and mix well until fully combined.
• Step 2: Spread a thin layer of the ricotta mixture in the bottom of a 9×13-inch baking dish. Arrange 3 lasagna noodles over the ricotta layer. Top with half of the remaining ricotta mixture, then sprinkle with half of the blueberries. Repeat the layers of noodles, ricotta, and blueberries, ending with the noodles.
• Step 3: In a small bowl, combine the graham cracker crumbs and melted butter. Sprinkle the mixture evenly over the top of the lasagna. Cover the dish with foil and bake for 30 minutes.
• Step 4: Remove the foil and bake for an additional 15-20 minutes, or until the lasagna is hot and bubbly. Sprinkle the mozzarella cheese over the top and bake for 5 more minutes, or until the cheese is melted and lightly browned.
• Step 5: Allow the lasagna to cool for 10-15 minutes before slicing and serving. Enjoy your delicious lemon blueberry creation!
