Ingredients
• 1 lb boneless, skinless chicken breasts, cubed
• 8 oz penne or rigatoni pasta
• 2 tablespoons olive oil
• 3 cloves garlic, minced
• 1 cup heavy cream
• 1/2 cup grated parmesan cheese
• 2 teaspoons Cajun seasoning
• 1/4 teaspoon red pepper flakes (optional)
• Salt and black pepper to taste
Instructions
• Step 1: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
• Step 2: In a large skillet, heat the olive oil over medium-high heat. Add the cubed chicken and season with Cajun seasoning, salt, and black pepper. Cook the chicken, stirring occasionally, until it’s no longer pink, about 6-8 minutes.
• Step 3: Reduce the heat to medium and add the minced garlic to the skillet. Cook for 1 minute, or until fragrant.
• Step 4: Pour in the heavy cream and grated parmesan cheese. Stir to combine and let the sauce simmer for 2-3 minutes, or until slightly thickened.
• Step 5: Add the cooked pasta to the skillet and toss everything together until the pasta is evenly coated in the creamy sauce.
• Step 6: If desired, sprinkle in the red pepper flakes for an extra kick of heat.
• Step 7: Serve hot, garnished with additional parmesan cheese and chopped parsley, if desired.
