Ingredients
• 2 (15-ounce) cans chickpeas, drained and rinsed
• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1 red onion, thinly sliced
• 1/2 cup crumbled feta cheese
• 1/4 cup chopped fresh parsley
• 1/4 cup chopped fresh basil
• 3 tablespoons olive oil
• 2 tablespoons red wine vinegar
• 1 tablespoon lemon juice
• 2 cloves garlic, minced
• 1 teaspoon dried oregano
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
• Step 1: In a large bowl, combine the drained and rinsed chickpeas, cherry tomatoes, diced cucumber, and sliced red onion.
• Step 2: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and black pepper to make the dressing.
• Step 3: Pour the dressing over the chickpea mixture and toss gently to coat.
• Step 4: Sprinkle the crumbled feta cheese, chopped parsley, and chopped basil over the top of the salad and gently fold to incorporate.
• Step 5: Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
• Step 6: Serve chilled or at room temperature, and enjoy!
