• 4 boneless, skinless chicken breasts
• 1/2 cup water
• 2 tablespoons salt
• 2 tablespoons lemon juice
• 1/2 cup panko breadcrumbs
• 1/2 cup grated Parmesan cheese

• 2 tablespoons mayonnaise

• 1/4 cup grated Parmesan cheese

Instructions
• Step 1: In a large bowl, combine the water, salt, and lemon juice. Add the chicken breasts, cover, and refrigerate for at least 30 minutes (or up to 4 hours) to brine the chicken.
• Step 2: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
• Step 3: In a shallow bowl, mix together the panko breadcrumbs and 1/2 cup of grated Parmesan cheese. In a separate small bowl, whisk together the olive oil, garlic, mayonnaise, Dijon mustard, 2 tablespoons of lemon juice, 1/4 cup of Parmesan cheese, dried oregano, and black pepper to create the Caesar dressing.
• Step 4: Remove the chicken from the brine, pat it dry with paper towels, and place it on the prepared baking sheet. Brush the top of each chicken breast with the Caesar dressing, then press the panko-Parmesan mixture onto the dressing to create a crunchy coating.
• Step 5: Bake the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the crust is golden brown. Let the chicken rest for 5 minutes before serving.
