• 1 lb ground beef
• 1 cup panko breadcrumbs
• 2 eggs, lightly beaten

• 1/2 cup shredded cheddar cheese
• 2 cloves garlic, minced
• 1 small onion, finely chopped
• 1 tbsp Worcestershire sauce
• 1 tsp dried oregano
• 1/2 tsp salt
• 1/4 tsp black pepper
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with nonstick cooking spray or line it with paper liners.
- Combine the Ingredients: In a large bowl, mix together the ground beef, panko breadcrumbs, eggs, milk, cheddar cheese, garlic, onion, Worcestershire sauce, oregano, salt, and pepper until well combined. Be careful not to overmix, as this can make the meatloaf tough.
- Fill the Muffin Tin: Divide the meatloaf mixture evenly among the prepared muffin cups, filling them about three-quarters full.
- Bake to Perfection: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the tops are golden brown and a meat thermometer inserted into the center of a muffin reads 165°F (75°C). Keep an eye on them towards the end, as you don’t want the edges to become too crispy.
- Rest and Serve: Allow the mini meatloaf muffins to rest in the tin for 5 minutes before carefully removing them. Serve hot, with your favorite sides and garnishes.
