Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round baking pan and set it aside.
  2. In a medium bowl, pour the boiling water over the chopped dates and let them soak for 10 minutes to soften.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the creamed butter mixture, mixing just until combined.
  7. Drain the softened dates and fold them into the cake batter.
  8. Pour the batter into the prepared baking pan and smooth the top.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
