Ingredients
• 1 lb ground beef
• 1 cup breadcrumbs
• 1/2 cup grated Parmesan cheese
• 2 eggs, beaten
• 2 cloves garlic, minced
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 8 oz mozzarella cheese, cut into 1-inch cubes
Instructions
- Prepare the Meatball Mixture: In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, beaten eggs, garlic, oregano, basil, salt, and black pepper. Gently mix the ingredients together until they are just combined, being careful not to overmix, which can result in tough meatballs.
- Stuff the Meatballs: Scoop out a heaping tablespoon of the meatball mixture and flatten it into a disc. Place a cube of mozzarella cheese in the center, then gently wrap the meat around the cheese, sealing it completely. Repeat this process until all the meatball mixture and mozzarella cubes have been used.
- Brown the Meatballs: Heat a large skillet over medium-high heat and add a tablespoon of oil. Working in batches, carefully add the stuffed meatballs to the hot pan and cook for 2-3 minutes per side, or until they are golden brown on the outside. This searing step helps to lock in the juices and create a delicious crust.
- Finish in the Oven: Transfer the browned meatballs to a baking sheet and bake in a preheated 400°F (200°C) oven for 10-12 minutes, or until the meatballs are cooked through and the cheese is melted and gooey.
