Ingredients
• 2 lbs boneless, skinless chicken breasts
• 1 cup barbecue sauce
• 1/2 cup apple cider vinegar
• 2 tablespoons brown sugar
• 1 tablespoon Dijon mustard
• 1 teaspoon smoked paprika
• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 1/4 teaspoon cayenne pepper (optional, for a spicy kick)
• 8 soft, toasted hamburger buns
Instructions
- Prepare the Chicken: Place the chicken breasts in a large pot or Dutch oven and cover with water. Bring the water to a boil over high heat, then reduce the heat to medium-low and simmer for 20-25 minutes, or until the chicken is cooked through. Drain the chicken and shred it using two forks.
- Make the Shredded Chicken Filling: In a large skillet or saucepan, combine the shredded chicken, barbecue sauce, apple cider vinegar, brown sugar, Dijon mustard, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using). Stir well and bring the mixture to a simmer over medium heat. Reduce the heat to low and let the filling simmer for 10-15 minutes, stirring occasionally, until the flavors have melded and the sauce has thickened slightly.
- Assemble the Sandwiches: Divide the shredded chicken mixture evenly among the toasted hamburger buns. Serve immediately, with any desired toppings or condiments.
