Ingredients
• 2 cups (250g) all-purpose flour
• 1 teaspoon (5g) baking powder
• 1/2 teaspoon (2.5g) salt
• 1/2 cup (120ml) milk
• 1/4 cup (60ml) olive oil
• 1 cup (150g) pitted and halved green olives, drained
• 1 cup (100g) shredded mozzarella cheese
• 1/4 cup (25g) grated Parmesan cheese
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan with butter or non-stick cooking spray to ensure the bread releases easily.
- Mix the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
- Incorporate the Wet Ingredients: In a separate bowl, combine the milk and olive oil. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Avoid overmixing, as this can result in a tough texture.
- Add the Olives and Cheese: Fold in the halved green olives, mozzarella cheese, and Parmesan cheese until evenly distributed throughout the dough.
- Transfer to the Loaf Pan: Spoon the olive cheese bread dough into the prepared loaf pan, smoothing the top with a spatula.
- Bake to Perfection: Place the pan in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Cool and Slice: Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer the loaf to a wire rack to cool completely before slicing and serving.
