Olive Garden-Inspired Pasta Salad

Ingredients

• 1 pound (454g) rotini or penne pasta
• 1 cup (150g) cherry tomatoes, halved
• 1 cup (150g) cucumber, diced
• 1 cup (150g) black olives, sliced
• 1 cup (150g) pepperoncini, sliced
• 1/2 cup (75g) red onion, thinly sliced
• 1/2 cup (120ml) Italian dressing
• 1/4 cup (60ml) creamy Caesar dressing
• 1/4 cup (35g) grated Parmesan cheese
• 2 tablespoons (30ml) red wine vinegar
• 1 teaspoon (5ml) dried Italian seasoning
• Salt and black pepper, to taste


Instructions

• Step 1: Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool completely.
• Step 2: In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, black olives, pepperoncini, and red onion.
• Step 3: In a small bowl, whisk together the Italian dressing, creamy Caesar dressing, Parmesan cheese, red wine vinegar, and Italian seasoning.
• Step 4: Pour the dressing over the pasta salad and toss gently to coat evenly. Season with salt and black pepper to taste.
• Step 5: Cover and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
