Ingredients

• 1 lb (450g) fresh spinach, thoroughly washed and chopped
• 1 cup (200g) paneer, cubed
• 2 tablespoons (30ml) oil
• 1 onion, finely chopped
• 3 cloves garlic, minced
• 1 teaspoon (5g) ginger, grated
• 1 teaspoon (5g) cumin powder
• 1 teaspoon (5g) coriander powder
• 1 teaspoon (5g) garam masala
• 1/2 teaspoon (2.5g) red chili powder (or to taste)
• 1 cup (240ml) water or vegetable broth
• Salt to taste
• 2 tablespoons (30ml) heavy cream (optional)


Instructions

  1. Prepare the Spinach: Thoroughly wash the fresh spinach leaves and chop them into bite-sized pieces. This step ensures the spinach cooks evenly and incorporates seamlessly into the dish.
  2. Sauté the Aromatics: In a large skillet or pan, heat the oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then, stir in the minced garlic and grated ginger, and cook for an additional 2 minutes, being careful not to burn the garlic.
  3. Spice it Up: To the aromatic onion-garlic-ginger mixture, add the cumin powder, coriander powder, garam masala, and red chili powder. Stir well and cook for 1-2 minutes to allow the spices to bloom and release their flavors.
  4. Simmer the Spinach: Add the chopped spinach to the pan and pour in the water or vegetable broth. Bring the mixture to a gentle simmer and cook for 10-15 minutes, stirring occasionally, until the spinach is very soft and the flavors have melded together.
  5. Introduce the Paneer: Gently fold in the cubed paneer and continue to simmer for an additional 5 minutes, allowing the paneer to warm through and absorb the flavors of the spinach mixture.
  6. Finish with Cream: If desired, stir in the heavy cream to add a luxurious, creamy texture to the dish. Taste and adjust the seasoning with salt as needed.
  7. Serve with Pride: Ladle the delicious Palak Paneer into serving bowls and garnish with a sprinkle of garam masala or a few fresh coriander leaves. Serve hot with your choice of accompaniment, such as naan, rice, or roti.
