Ingredients
• 2 cups (480 ml) heavy cream
• 1/2 cup (100 g) granulated sugar
• 1 vanilla bean, split lengthwise or 1 teaspoon vanilla extract
• 1 1/2 teaspoons (7.5 ml) unflavored gelatin powder
• 2 tablespoons (30 ml) cold water
Instructions
- Bloom the Gelatin: In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom, or until the gelatin is softened.
- Heat the Cream and Sugar: In a medium saucepan, combine the heavy cream and granulated sugar. Scrape the seeds from the vanilla bean and add them to the cream mixture. (If using vanilla extract, add it later.) Heat the mixture over medium, stirring occasionally, until the sugar has dissolved and the mixture is just starting to steam, about 5 minutes.
- Incorporate the Gelatin: Remove the saucepan from the heat and whisk in the bloomed gelatin until it is completely dissolved. If using vanilla extract, add it now and stir to combine.
- Strain and Portion: Strain the Panna Cotta mixture through a fine-mesh sieve to remove any undissolved gelatin or vanilla bean particles. Carefully pour the mixture into individual ramekins or a serving dish. Refrigerate for at least 4 hours, or until set.
- Unmold and Serve: To unmold the Panna Cotta, run a small knife or offset spatula around the edge of the ramekin and gently invert it onto a plate. Serve chilled, with your choice of toppings such as fresh berries, caramel sauce, or a sprinkle of toasted nuts.
