Ingredients
• 8 oz. linguine or spaghetti
• 2 tablespoons olive oil
• 3 cloves garlic, minced
• 1 cup heavy cream
• 1/2 cup freshly grated Parmesan cheese, plus more for serving
• 1/4 cup fresh lemon juice (from about 2 lemons)
• 1 teaspoon lemon zest
• Salt and freshly ground black pepper to taste
• Chopped fresh parsley for garnish (optional)
Instructions
• Step 1: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Drain the pasta, reserving 1/2 cup of the cooking water.
• Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant and lightly golden.
• Step 3: Reduce the heat to low and add the heavy cream to the skillet. Whisk in the Parmesan cheese, lemon juice, and lemon zest. Season with salt and pepper to taste.
• Step 4: Add the cooked pasta to the skillet and toss to coat, adding a splash or two of the reserved pasta water to create a smooth, creamy sauce. Cook for an additional 2-3 minutes, stirring constantly, until the sauce has thickened slightly.
• Step 5: Remove from heat and serve immediately, garnished with additional Parmesan cheese and chopped fresh parsley, if desired.
