Pasta Salad with Italian Dressing

Ingredients

• 1 pound (454g) dry pasta, such as fusilli or penne
• 1 cup (150g) cherry tomatoes, halved
• 1 medium bell pepper, diced
• 1 cucumber, diced
• 1/2 red onion, thinly sliced
• 1/2 cup (120ml) Italian dressing (store-bought or homemade)
• 2 tablespoons (30ml) red wine vinegar
• 1 teaspoon (5ml) dried oregano
• 1/2 teaspoon (2.5ml) garlic powder
• Salt and freshly ground black pepper, to taste

Instructions

• Step 1: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
• Step 2: In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, bell pepper, cucumber, and red onion.
• Step 3: In a small bowl, whisk together the Italian dressing, red wine vinegar, dried oregano, and garlic powder. Season with salt and black pepper to taste.
• Step 4: Pour the dressing over the pasta and vegetables, and toss gently to coat everything evenly.
• Step 5: Cover the pasta salad and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
• Step 6: Just before serving, give the salad another gentle toss to ensure the dressing is evenly distributed. Adjust seasoning if necessary.
