Ingredients
• 3 ripe peaches, sliced
• 2 lbs ripe tomatoes, sliced
• 8 oz fresh mozzarella cheese, sliced
• 1/2 cup balsamic vinegar
• 2 tbsp honey
• 1/4 cup extra-virgin olive oil
• 1/4 cup fresh basil leaves, chopped
• 1 tsp salt
• 1/2 tsp freshly ground black pepper
Instructions
- Prepare the Peaches and Tomatoes: Slice the peaches and tomatoes into 1/4-inch thick rounds. Arrange the slices on a large serving platter or in a shallow bowl, alternating the peach and tomato slices.
- Make the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey. Bring the mixture to a simmer over medium heat, stirring occasionally, until it reduces by half and becomes thicker and syrupy, about 10 minutes. Remove from heat and let cool slightly.
- Assemble the Salad: Arrange the sliced mozzarella cheese over the peach and tomato slices. Drizzle the balsamic glaze over the top, making sure to coat all the ingredients evenly. Sprinkle the chopped fresh basil leaves over the salad, and then season with salt and pepper.
- Serve and Enjoy: Serve the Peach and Tomato Caprese Salad immediately, while the mozzarella is still cool and the balsamic glaze is at its best. This salad is best enjoyed at room temperature, so let it sit for 5-10 minutes before serving.
