Ingredients
• 4 pounds (1.8 kg) chicken thighs and drumsticks, skin-on and bone-in
• 1/2 cup (120 ml) olive oil
• 1/4 cup (60 ml) lemon juice
• 3 tablespoons (45 ml) peri peri sauce (or more, to taste)
• 4 cloves garlic, minced
• 2 teaspoons (10 ml) smoked paprika
• 1 teaspoon (5 ml) ground cumin
• 1 teaspoon (5 ml) dried oregano
• 1/2 teaspoon (2.5 ml) cayenne pepper (or more, to taste)
• 1 teaspoon (5 ml) salt
• 1/2 teaspoon (2.5 ml) black pepper
Instructions
• Step 1: In a large bowl, whisk together the olive oil, lemon juice, peri peri sauce, garlic, smoked paprika, cumin, oregano, cayenne pepper, salt, and black pepper.
• Step 2: Add the chicken thighs and drumsticks to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 24 hours, to allow the flavors to fully develop.
• Step 3: Preheat your oven to 400°F (200°C).
• Step 4: Arrange the marinated chicken pieces on a large baking sheet lined with parchment paper or a silicone mat.
• Step 5: Bake the chicken for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown.
• Step 6: Remove the chicken from the oven and let it rest for 5 minutes before serving.
