Ingredients
• 3 Persian cucumbers, thinly sliced
• 1/2 red onion, thinly sliced
• 1/4 cup chopped fresh mint
• 1/4 cup chopped fresh parsley
• 2 tablespoons lemon juice
• 2 tablespoons olive oil
• 1 teaspoon white wine vinegar
• 1/2 teaspoon ground cumin
• 1/4 teaspoon ground coriander
• Salt and pepper to taste
Instructions
• Step 1: Thinly slice the Persian cucumbers and place them in a large bowl.
• Step 2: Thinly slice the red onion and add it to the bowl with the cucumbers.
• Step 3: In a small bowl, whisk together the lemon juice, olive oil, white wine vinegar, ground cumin, and ground coriander. Season with salt and pepper to taste.
• Step 4: Pour the dressing over the cucumbers and onions, and toss gently to coat.
• Step 5: Roughly chop the fresh mint and parsley, and sprinkle them over the salad. Gently toss to combine.
• Step 6: Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
