Ingredients
• 3 ripe persimmons, peeled and sliced
• 5 oz mixed greens (such as baby spinach, arugula, or mesclun)
• 1/2 cup toasted walnuts or pecans
• 1/4 cup crumbled feta cheese (optional)
• 2 tbsp balsamic vinegar
• 1 tbsp extra-virgin olive oil
• 1 tsp Dijon mustard
• 1 tsp honey
• Salt and freshly ground black pepper to taste
Instructions
• Step 1: In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, and honey to make the vinaigrette. Season with salt and pepper to taste.
• Step 2: In a large salad bowl, combine the mixed greens, sliced persimmons, and toasted nuts. Drizzle the vinaigrette over the salad and toss gently to coat.
• Step 3: If desired, sprinkle the crumbled feta cheese over the top of the salad.
• Step 4: Serve the persimmon salad immediately, or refrigerate until ready to serve.
