Persimmon Salad Recipe

Ingredients

• 3 ripe persimmons, sliced
• 5 oz mixed greens (such as arugula, spinach, and kale)
• 1/2 cup toasted pecans or walnuts
• 2 tablespoons extra-virgin olive oil
• 1 tablespoon apple cider vinegar
• 1 teaspoon Dijon mustard
• 1 tablespoon honey
• Salt and pepper to taste


Instructions

• Step 1: Toast the pecans or walnuts in a dry skillet over medium heat, stirring frequently, until fragrant and lightly browned, about 5 minutes. Allow to cool completely.
• Step 2: In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, and honey. Season with salt and pepper to taste.
• Step 3: In a large salad bowl, combine the mixed greens and sliced persimmons. Drizzle the vinaigrette over the top and toss gently to coat.
• Step 4: Sprinkle the toasted nuts over the salad and serve immediately.
