Ingredients

• 1 lb thinly sliced ribeye or top round steak, cut into bite-sized pieces
• 2 medium yellow onions, thinly sliced
• 2 green bell peppers, thinly sliced
• 8 oz provolone cheese, sliced or shredded
• 4 soft hoagie or sub rolls, split lengthwise
• 2 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp dried oregano
• 1/2 tsp black pepper
• 1/4 tsp salt


Instructions

  1. Prepare the Ingredients: Begin by slicing the onions and bell peppers into thin strips. Set them aside. Slice or shred the provolone cheese, and prepare the hoagie rolls by splitting them lengthwise.
  2. Season the Beef: In a large bowl, combine the sliced beef, garlic powder, dried oregano, black pepper, and salt. Toss the beef until it’s evenly coated with the seasonings.
  3. Sauté the Onions and Peppers: Heat the olive oil in a large skillet or griddle over medium-high heat. Add the sliced onions and bell peppers, and sauté for 5-7 minutes, or until they’re softened and starting to caramelize. Remove the onions and peppers from the skillet and set them aside.
  4. Cook the Beef: In the same skillet or griddle, working in batches if necessary, cook the seasoned beef for 2-3 minutes per batch, or until it’s browned and cooked through. Be careful not to overcrowd the pan, as this will steam the beef instead of searing it.
  5. Assemble the Sandwiches: Preheat your oven to 350°F (175°C). Place the split hoagie rolls on a baking sheet. Divide the cooked beef, onions, and peppers evenly among the rolls. Top each sandwich with a generous amount of provolone cheese.
