Ingredients

• 1 large pomelo, peeled and segmented
• 2 cups mixed greens (such as baby spinach, arugula, or mixed lettuce)
• 1 cucumber, diced
• 1 red bell pepper, thinly sliced
• 1/2 red onion, thinly sliced
• 2 tablespoons toasted peanuts or cashews (optional)
• 2 tablespoons chopped fresh cilantro (optional)


Instructions

• Step 1: Peel and segment the pomelo. Remove any bitter white pith and carefully separate the fruit segments.
• Step 2: In a large salad bowl, combine the mixed greens, diced cucumber, sliced red bell pepper, and thinly sliced red onion.
• Step 3: Add the pomelo segments to the salad bowl, gently tossing to incorporate all the ingredients.
• Step 4: If desired, top the salad with toasted peanuts or cashews and chopped fresh cilantro.
