• 4 boneless, skinless chicken breasts
• 2 cups crushed potato chips
• 1/2 cup all-purpose flour
• 2 eggs, beaten

Instructions
• Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
• Step 2: Place the crushed potato chips in a shallow bowl or plate. In a separate shallow bowl, combine the flour, salt, and black pepper. In a third shallow bowl, beat the eggs.
• Step 3: Dredge the chicken breasts in the flour mixture, coating both sides. Dip the floured chicken into the beaten eggs, allowing any excess to drip off. Finally, press the chicken firmly into the crushed potato chips, ensuring an even coating on all sides.
• Step 4: Place the potato chip-crusted chicken on the prepared baking sheet. Drizzle the top of each chicken breast with a small amount of olive oil.
• Step 5: Bake the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the crust is golden brown and crispy. Halfway through the baking time, flip the chicken breasts to ensure even cooking.
• Step 6: Remove the crispy potato chip crusted chicken from the oven and let it rest for 5 minutes before serving.
