Ingredients
• 2 tablespoons unsalted butter
• 2 tablespoons all-purpose flour
• 1 cup whole milk
• 1 cup shredded Monterey Jack cheese
• 1 cup shredded white cheddar cheese
• 1 teaspoon ground cumin
• 1/2 teaspoon chili powder
• 1/4 teaspoon garlic powder
• 1/4 teaspoon onion powder
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper
Instructions
• Step 1: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until the mixture is smooth and bubbling.
• Step 2: Gradually whisk in the milk, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook for 2-3 minutes, or until thickened slightly.
• Step 3: Reduce the heat to low and gradually add the Monterey Jack and white cheddar cheeses, stirring constantly until the cheese is melted and the dip is smooth.
• Step 4: Stir in the cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Taste and adjust seasonings as needed.
• Step 5: Serve the queso blanco dip warm, with tortilla chips, vegetables, or as a topping for your favorite Tex-Mex dishes.
