Vibrant and Delicious Rainbow Cake Recipe

Ingredients

  • 📌 2 cups all-purpose flour
  • 📌 2 teaspoons baking powder
  • 📌 1/2 teaspoon salt
  • 📌 1 cup unsalted butter, softened
  • 📌 1 1/2 cups granulated sugar
  • 📌 4 large eggs
  • 📌 2 teaspoons vanilla extract
  • 📌 1 cup milk
  • 📌 Food coloring (red, orange, yellow, green, blue, and purple)
  • 📌 Buttercream frosting (or your favorite frosting recipe)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour six 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Alternately add the flour mixture and milk to the butter mixture, mixing until just combined.
  6. Divide the batter evenly into six separate bowls. Add a different food coloring to each bowl, creating the rainbow colors (red, orange, yellow, green, blue, and purple).
  7. Spread each colored batter into one of the prepared cake pans.
  8. Bake the cakes for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and let them cool completely on a wire rack.
  10. Once the cakes are cooled, use a serrated knife to trim the tops of the cakes to create flat, even layers.
  11. Place the first (purple) layer on a serving plate or cake stand. Spread a layer of buttercream frosting on top.
  12. Repeat with the remaining cake layers, alternating the colors and frosting in between each layer.
  13. Frost the top and sides of the cake with the remaining buttercream frosting.
  14. Chill the cake in the refrigerator for at least 2 hours before serving to allow the layers to set.
