Ingredients
- 📌 2 cups all-purpose flour

- 📌 1 cup unsalted butter, softened
- 📌 1 1/2 cups granulated sugar
- 📌 4 large eggs
- 📌 2 teaspoons vanilla extract
- 📌 1 cup milk
- 📌 Food coloring (red, orange, yellow, green, blue, and purple)
- 📌 Buttercream frosting (or your favorite frosting recipe)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour six 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Alternately add the flour mixture and milk to the butter mixture, mixing until just combined.
- Divide the batter evenly into six separate bowls. Add a different food coloring to each bowl, creating the rainbow colors (red, orange, yellow, green, blue, and purple).
- Spread each colored batter into one of the prepared cake pans.
- Bake the cakes for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and let them cool completely on a wire rack.
- Once the cakes are cooled, use a serrated knife to trim the tops of the cakes to create flat, even layers.
- Place the first (purple) layer on a serving plate or cake stand. Spread a layer of buttercream frosting on top.
- Repeat with the remaining cake layers, alternating the colors and frosting in between each layer.
- Frost the top and sides of the cake with the remaining buttercream frosting.
- Chill the cake in the refrigerator for at least 2 hours before serving to allow the layers to set.
