• 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
• 2 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp chili powder
• 1 tsp cumin
• 1 tsp paprika
• 1/2 tsp salt
• 1/4 tsp black pepper
• 8 (6-inch) flour or corn tortillas, warmed
• Shredded lettuce, diced tomatoes, shredded cheese, and lime wedges, for serving
Instructions
- Prepare the Chicken: In a large bowl, combine the cubed chicken, olive oil, garlic powder, chili powder, cumin, paprika, salt, and pepper. Toss to evenly coat the chicken in the spice mixture.
- Cook the Chicken: Heat a large skillet or grill pan over medium-high heat. Add the seasoned chicken in a single layer and cook for 4-5 minutes per side, or until the chicken is cooked through and lightly browned on the edges. Be careful not to overcrowd the pan, as this can cause the chicken to steam instead of sear. Work in batches if needed.
- Make the Ranch Sauce: In a small bowl, whisk together 1/2 cup sour cream, 1/4 cup mayonnaise, 2 tablespoons finely chopped fresh parsley, 1 tablespoon finely chopped fresh dill, 1 tablespoon lemon juice, 1 teaspoon garlic powder, and a pinch of salt and pepper. Taste and adjust seasonings as needed.
- Assemble the Tacos: Place the warm tortillas on a serving platter. Top each tortilla with a portion of the cooked ranch chicken, followed by shredded lettuce, diced tomatoes, and a drizzle of the homemade ranch sauce. Serve with lime wedges on the side.
