Instructions
- Soak the Beans: In a large bowl, cover the dried red kidney beans with water and let them soak overnight. This helps to soften the beans and reduce their cooking time.
- Sauté the Aromatics: In a large pot or Dutch oven, cook the andouille sausage over medium-high heat until it begins to brown, about 5-7 minutes. Remove the sausage from the pot and set it aside. Add the onions, celery, and bell pepper to the pot and sauté until they are softened, about 5-7 minutes. Add the garlic and continue cooking for an additional minute, stirring constantly to prevent burning.
- Cook the Beans: Drain the soaked beans and add them to the pot along with the bay leaves, thyme, smoked paprika, cayenne pepper, Creole seasoning, and 4 cups of broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1-1.5 hours, or until the beans are very soft and creamy. Stir the pot occasionally to prevent sticking or burning.
- Finish the Dish: Once the beans are cooked, use a potato masher or the back of a spoon to mash about half of the beans, creating a thick, creamy base. This helps to thicken the overall dish. Add the reserved sausage back to the pot and season with salt and pepper to taste.
- Cook the Rice: While the beans are simmering, prepare the rice according to the package instructions. Fluff the cooked rice with a fork.
- Serve and Enjoy: Spoon the red beans over a bed of fluffy white rice. Garnish with chopped green onions, parsley, or additional Creole seasoning, if desired. Serve hot and savor every bite!
