• 2 cups dried pinto beans, soaked overnight and drained
• 1 tablespoon olive oil
• 1 medium onion, diced
• 4 cloves garlic, minced
• 1 teaspoon ground cumin
• 1 teaspoon chili powder
• 1 teaspoon dried oregano
• 1 teaspoon salt, or to taste
• 1/4 teaspoon freshly ground black pepper
• 1 cup vegetable or chicken broth, plus more as needed
Instructions
- Soak the Beans: Start by soaking the pinto beans in water overnight, or for at least 8 hours. This helps to soften the beans and reduce the cooking time. Once soaked, drain and rinse the beans.
- Sauté the Aromatics: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes, until the onion is soft and translucent. Then, add the minced garlic and cook for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant and just starting to brown.
- Cook the Beans: Add the soaked and drained pinto beans to the skillet, along with the cumin, chili powder, oregano, salt, and pepper. Pour in the 1 cup of broth and bring the mixture to a boil. Reduce the heat to low, cover the skillet, and let the beans simmer for 45-60 minutes, stirring occasionally, until the beans are very soft and creamy.
- Mash and Finish: Using a potato masher or the back of a fork, mash the beans directly in the skillet, leaving some chunks for texture. If the beans seem too thick, add additional broth, 1/4 cup at a time, until you reach your desired consistency. Taste and adjust seasoning as needed.
