The Best Perfect Roasted Mushrooms in the Oven

  • Author: Elizabeth
  • Total Time: 30-35 minutes

Ingredients

• 1 pound (454g) mixed mushrooms (such as cremini, shiitake, and oyster), cleaned and halved or quartered
• 3 tablespoons (45ml) olive oil
• 3 cloves garlic, minced
• 2 teaspoons (10ml) fresh thyme leaves
• 1 teaspoon (5ml) fresh rosemary, chopped
• 1/2 teaspoon (2.5ml) sea salt
• 1/4 teaspoon (1.25ml) freshly ground black pepper

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature is crucial for achieving the perfect caramelization on the mushrooms.
  2. Prepare the Mushrooms: Clean the mushrooms by gently wiping them with a damp paper towel. Avoid running them under water, as this can make them soggy. Cut the larger mushrooms in half or quarters, ensuring that all the pieces are roughly the same size for even cooking.
  3. Toss with Seasonings: In a large bowl, combine the prepared mushrooms, olive oil, minced garlic, thyme, rosemary, salt, and pepper. Toss everything together until the mushrooms are evenly coated.
  4. Roast to Perfection: Spread the seasoned mushrooms in a single layer on a large baking sheet. Make sure not to overcrowd the pan, as this can cause the mushrooms to steam instead of roasting. Roast for 20-25 minutes, stirring halfway, until the mushrooms are golden brown and crispy on the edges.
  5. Finish with a Flourish: Once the mushrooms are perfectly roasted, remove them from the oven and let them cool for a few minutes. Adjust the seasoning with additional salt and pepper to taste, if desired.
