Rotini Pasta Salad

Ingredients

• 1 pound rotini pasta
• 1 red bell pepper, diced
• 1 yellow bell pepper, diced
• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1 red onion, thinly sliced
• 1 cup crumbled feta cheese
• 1/4 cup fresh basil, chopped
• 1/4 cup fresh parsley, chopped
• 1/2 cup olive oil
• 1/4 cup red wine vinegar
• 2 tablespoons lemon juice
• 1 teaspoon Dijon mustard
• 1 teaspoon dried oregano
• Salt and pepper, to taste


Instructions

• Step 1: Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to cool completely.
• Step 2: In a large bowl, combine the cooled pasta, diced bell peppers, cherry tomatoes, diced cucumber, and thinly sliced red onion.
• Step 3: In a separate bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, dried oregano, salt, and pepper to make the dressing.
• Step 4: Pour the dressing over the pasta and vegetable mixture, then gently toss to coat everything evenly.
• Step 5: Fold in the crumbled feta cheese and chopped fresh basil and parsley.
• Step 6: Refrigerate the rotini pasta salad for at least 30 minutes to allow the flavors to meld.
• Step 7: Serve chilled or at room temperature, and enjoy!
