Instructions

  1. Prepare the Salmon: Gently chop the fresh salmon fillets into small, bite-sized pieces, being careful not to overmix or break up the fish too much. This will help maintain the delicate texture of the final patties.
  2. Mix the Ingredients: In a large mixing bowl, combine the chopped salmon, panko breadcrumbs, beaten eggs, chopped parsley, lemon juice, Dijon mustard, salt, and black pepper. Gently fold the ingredients together with a spatula until just combined, being careful not to overwork the mixture.
