Salmon with Mango Salsa

Ingredients

• 4 salmon fillets (4-6 oz each)
• 2 ripe mangoes, diced
• 1 red onion, finely chopped
• 1 jalapeño, seeded and minced
• 1 lime, juiced
• 2 tablespoons fresh cilantro, chopped
• 1 tablespoon olive oil
• Salt and pepper to taste


Instructions

• Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
• Step 2: Place the salmon fillets on the prepared baking sheet and season them with salt and pepper.
• Step 3: Bake the salmon for 12-15 minutes, or until it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
• Step 4: In a medium bowl, combine the diced mango, red onion, jalapeño, lime juice, cilantro, and olive oil. Season with salt and pepper to taste.
• Step 5: Serve the baked salmon warm, topped with the prepared mango salsa. Enjoy!
