Ingredients
• 4 (6-ounce) salmon fillets
• 2 tablespoons olive oil
• 1 teaspoon ground cumin
• 1 teaspoon paprika
• Salt and freshly ground black pepper, to taste
• 2 mangoes, diced
• 1 red bell pepper, diced
• 1/2 red onion, finely chopped
• 1 jalapeño, seeded and finely chopped
• 1/4 cup chopped fresh cilantro
• 2 tablespoons fresh lime juice
• 1 tablespoon honey
Instructions
• Step 1: In a small bowl, combine the cumin, paprika, salt, and pepper. Rub the seasoning mixture evenly over the salmon fillets.
• Step 2: Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the salmon fillets and sear for 3-4 minutes per side, or until the salmon is cooked through and easily flakes with a fork.
• Step 3: In a medium bowl, combine the diced mangoes, bell pepper, red onion, jalapeño, cilantro, lime juice, and honey. Stir to mix well.
• Step 4: Serve the seared salmon fillets topped with the mango salsa. Enjoy!
