Santa Fe Chicken Salad

Ingredients

• 4 boneless, skinless chicken breasts
• 1 head of romaine lettuce, chopped
• 1 cup cherry tomatoes, halved
• 1 red bell pepper, sliced
• 1 avocado, diced
• 1/2 cup shredded cheddar cheese
• 1/4 cup sliced black olives
• 2 tablespoons lime juice
• 2 tablespoons olive oil
• 1 teaspoon chili powder
• 1/2 teaspoon cumin
• Salt and pepper to taste


Instructions

• Step 1: Preheat your grill or grill pan to medium-high heat. Season the chicken breasts with chili powder, cumin, salt, and pepper. Grill the chicken for 6-8 minutes per side, or until it’s cooked through and reaches an internal temperature of 165°F. Allow the chicken to rest for 5 minutes, then slice or shred it into bite-sized pieces.
• Step 2: In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, sliced bell pepper, diced avocado, shredded cheddar cheese, and sliced black olives.
• Step 3: In a small bowl, whisk together the lime juice and olive oil to create the dressing. Season with salt and pepper to taste.
• Step 4: Add the grilled chicken to the salad bowl and drizzle the lime dressing over the top. Toss gently to coat all the ingredients.
• Step 5: Serve the Santa Fe Chicken Salad immediately, garnished with any additional toppings or herbs, if desired.
