• 1/2 teaspoon salt
• 2 tablespoons sesame oil, plus more for brushing
• 1 bunch (about 8 ounces/225g) scallions, thinly sliced
• 1/4 teaspoon white pepper (or black pepper)
Instructions
- Make the Dough: In a large mixing bowl, combine the all-purpose flour and salt. Slowly pour in the boiling water while stirring the mixture with a wooden spoon or your hands. Knead the dough until it comes together and forms a smooth, elastic ball, about 5 minutes. Cover the dough with a damp cloth or plastic wrap and let it rest for 30 minutes.
- Roll and Layer the Dough: Dust a clean work surface with flour. Divide the dough into 8 equal pieces. Working with one piece at a time (keep the rest covered), use a rolling pin to roll the dough into a thin, round wrapper, about 6 inches in diameter. Brush the wrapper lightly with sesame oil, then sprinkle with some of the sliced scallions and a pinch of white pepper. Roll the wrapper up tightly like a jelly roll, then coil the roll into a spiral and pinch the seam to seal. Repeat with the remaining dough and fillings.
- Cook the Pancakes: Heat a large non-stick skillet or griddle over medium-high heat. Add a small amount of oil and swirl to coat the surface. Place one of the spiral pancakes, seam-side down, in the pan. Cook for 2-3 minutes per side, or until golden brown and crispy. Repeat with the remaining pancakes, adding more oil to the pan as needed. Be sure not to overcrowd the pan, as this will cause the pancakes to steam rather than fry.
- Serve and Enjoy: Transfer the cooked scallion pancakes to a plate and serve them hot, with your favorite dipping sauce on the side (such as soy sauce, hot sauce, or a mixture of soy sauce, rice vinegar, and sesame oil).
