Ingredients

• 1 lb (450g) fresh, peeled and deveined shrimp, tails removed
• 1 cup (240ml) freshly squeezed lime juice
• 1/2 cup (120ml) freshly squeezed lemon juice
• 1 cup (150g) diced tomatoes
• 1/2 cup (80g) diced red onion
• 1/4 cup (10g) chopped fresh cilantro
• 1 jalapeño pepper, seeded and minced (optional, for a spicy kick)
• 1 teaspoon (5g) sea salt
• 1/4 teaspoon (1.25g) ground black pepper


Instructions

  1. Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Cut the shrimp into bite-sized pieces, about 1/2-inch (1.25cm) in size.
  2. Marinate the Shrimp: In a large non-reactive bowl (glass or stainless steel), combine the shrimp, lime juice, and lemon juice. Gently stir to ensure the shrimp is evenly coated. Cover the bowl and refrigerate for 30-45 minutes, or until the shrimp is opaque and firm to the touch.
  3. Add the Vegetables: While the shrimp is marinating, prepare the remaining ingredients. Dice the tomatoes, onion, and jalapeño (if using). Chop the fresh cilantro. Add the vegetables, salt, and black pepper to the bowl with the marinated shrimp. Gently stir to combine.
