• 8 oz smoked salmon, flaked or chopped

• 1 cup cherry tomatoes, halved
• 1/2 cucumber, sliced
• 2 tablespoons capers, drained
• 2 tablespoons diced red onion
• 2 tablespoons chopped fresh dill
• 3 tablespoons olive oil
• 2 tablespoons lemon juice
• 1 tablespoon Dijon mustard
• Salt and pepper to taste
Instructions
• Step 1: In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, capers, and red onion.
• Step 2: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
• Step 3: Add the flaked or chopped smoked salmon to the salad and drizzle the dressing over the top. Gently toss to coat the ingredients evenly.
• Step 4: Sprinkle the chopped fresh dill over the salad and serve immediately.
