Ingredients
• 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
• 2 tbsp olive oil
• 1 onion, diced
• 3 cloves garlic, minced
• 2 cups long-grain white rice
• 2 cups chicken broth
• 1 cup heavy cream
• 2 tbsp Dijon mustard
• 1 tsp dried thyme
• 1 tsp paprika
• Salt and black pepper, to taste
Instructions
- Prepare the Chicken: Pat the chicken cubes dry with paper towels and season them generously with salt and black pepper.
- Sear the Chicken: Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Working in batches if necessary, add the chicken and sear it on all sides until it’s golden brown, about 2-3 minutes per side. Remove the chicken from the pan and set it aside.
- Sauté the Aromatics: Reduce the heat to medium and add the diced onion to the same pan. Cook, stirring occasionally, until the onion is softened and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute, until fragrant.
- Cook the Rice: Add the rice to the pan and stir to coat it in the oil and aromatics. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pan, and simmer for 15-20 minutes, or until the rice is tender and has absorbed all the liquid.
- Make the Creamy Sauce: Once the rice is cooked, stir in the heavy cream, Dijon mustard, dried thyme, and paprika. Bring the mixture to a gentle simmer and cook, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
- Finish the Dish: Add the seared chicken back to the pan and gently fold it into the creamy rice mixture. Cook for an additional 5-7 minutes, or until the chicken is cooked through and the sauce has reached your desired consistency.
