• 8 ounces soba noodles
• 1 red bell pepper, julienned
• 1 yellow bell pepper, julienned
• 2 carrots, julienned
• 1 cup snow peas, julienned
• 3 green onions, thinly sliced
• 1/4 cup toasted sesame seeds
• 2 tablespoons soy sauce
• 2 tablespoons rice vinegar
• 1 tablespoon sesame oil
• 1 tablespoon honey
• 1 teaspoon grated ginger
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
• Step 1: Bring a large pot of water to a boil. Cook the soba noodles according to package instructions, typically 4-5 minutes. Drain and rinse the noodles under cold water to stop the cooking process.
• Step 2: In a large bowl, combine the cooked and rinsed soba noodles, julienned bell peppers, carrots, snow peas, and sliced green onions. Toss gently to mix.
• Step 3: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, salt, and black pepper to make the dressing.
• Step 4: Pour the dressing over the soba noodle mixture and toss gently to coat evenly. Sprinkle the toasted sesame seeds over the top.
• Step 5: Refrigerate the soba noodle salad for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
