Ingredients
• 8 ounces soba noodles
• 1 red bell pepper, thinly sliced
• 1 cup shredded carrots
• 1 cup thinly sliced cucumber
• 1/2 cup thinly sliced red onion
• 2 tablespoons toasted sesame seeds
• 1/4 cup chopped fresh cilantro (optional)
Instructions
• Step 1: Bring a large pot of water to a boil. Cook the soba noodles according to the package instructions, typically 4-5 minutes. Drain the noodles and rinse them under cold water to stop the cooking process. Set aside to cool.
• Step 2: In a large bowl, combine the cooked and cooled soba noodles, sliced red bell pepper, shredded carrots, sliced cucumber, and thinly sliced red onion.
• Step 3: In a small bowl, whisk together the dressing ingredients: 1/4 cup rice vinegar, 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 tablespoon honey, 1 teaspoon grated ginger, and 1 minced garlic clove.
• Step 4: Pour the dressing over the soba noodle mixture and toss gently to coat. Sprinkle the toasted sesame seeds and chopped cilantro (if using) over the top.
• Step 5: Chill the soba noodle salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
