Ingredients

• 1 cup stone-ground grits
• 4 cups chicken or vegetable broth
• 2 tablespoons unsalted butter
• 1 pound large shrimp, peeled and deveined
• 2 cloves garlic, minced
• 1 tablespoon Cajun seasoning
• 1/4 cup heavy cream
• 2 green onions, sliced
• Salt and freshly ground black pepper, to taste


Instructions

  1. Prepare the Grits: In a large saucepan, bring the chicken or vegetable broth to a boil over high heat. Once boiling, gradually whisk in the grits, stirring constantly to prevent lumps. Reduce the heat to low, cover, and simmer, stirring occasionally, for 20-25 minutes, or until the grits are creamy and tender. Stir in the butter and season with salt and pepper to taste.
  2. Cook the Shrimp: In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, or until they are opaque and lightly charred. Remove the shrimp from the pan and set aside.
  3. Build the Flavor: In the same skillet, sauté the minced garlic over medium heat for 1 minute, or until fragrant. Add the Cajun seasoning and stir to coat the garlic. Pour in the heavy cream and simmer for 2-3 minutes, or until the sauce has thickened slightly.
  4. Finish the Dish: Return the cooked shrimp to the skillet and toss to coat them in the creamy Cajun sauce. Taste and adjust the seasoning with salt and pepper as needed. Serve the shrimp and grits immediately, garnished with sliced green onions.
