Ingredients
• 2 cups cooked, shredded chicken
• 1 cup shredded cheddar cheese
• 1/2 cup diced onion
• 1 tablespoon chili powder
• 1 teaspoon ground cumin
• 1/2 teaspoon smoked paprika
• Salt and pepper to taste
• 20 egg roll wrappers
• Vegetable oil for frying
Instructions
• Step 1: In a large bowl, mix together the cooked, shredded chicken, shredded cheddar cheese, diced onion, chili powder, cumin, smoked paprika, salt, and pepper until well combined.
• Step 2: Lay an egg roll wrapper on a flat surface in a diamond shape. Place 2-3 tablespoons of the chicken mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up tightly to form the egg roll.
• Step 3: In a large skillet or Dutch oven, heat 2-3 inches of vegetable oil to 350°F. Carefully add the prepared egg rolls and fry for 2-3 minutes per side, or until golden brown and crispy. Transfer the fried egg rolls to a paper towel-lined plate to drain any excess oil.
• Step 4: Serve the southwest chicken egg rolls warm, with your choice of dipping sauces such as ranch, guacamole, or salsa.
