Spicy Korean Carrot Salad

Ingredients

• 1 pound carrots, peeled and grated
• 2 tablespoons gochujang (Korean red chili paste)
• 2 tablespoons rice vinegar
• 1 tablespoon honey
• 1 teaspoon sesame oil
• 2 cloves garlic, minced
• 1 teaspoon grated ginger
• 1/4 teaspoon salt
• 2 tablespoons toasted sesame seeds


Instructions

• Step 1: Peel and grate the carrots using a box grater or food processor. Transfer the grated carrots to a large mixing bowl.
• Step 2: In a small bowl, whisk together the gochujang, rice vinegar, honey, sesame oil, garlic, and ginger until well combined.
• Step 3: Pour the dressing over the grated carrots and toss to ensure the carrots are evenly coated.
• Step 4: Sprinkle the salad with toasted sesame seeds and a pinch of salt. Toss once more to distribute the seasonings.
• Step 5: Cover the bowl and refrigerate the Spicy Korean Carrot Salad for at least 30 minutes to allow the flavors to meld together.
