• 10 ounces frozen chopped spinach, thawed and drained
• 1 cup seasoned breadcrumbs
• 1 cup grated Parmesan cheese
• 2 large eggs, beaten
• 2 cloves garlic, minced
• 1 teaspoon dried oregano
• 1/2 teaspoon salt
• 1/4 teaspoon ground black pepper
Instructions
• Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
• Step 2: In a large bowl, combine the thawed and drained spinach, breadcrumbs, Parmesan cheese, beaten eggs, garlic, oregano, salt, and black pepper. Mix well until all the ingredients are evenly distributed.
• Step 3: Using a small cookie scoop or spoon, form the mixture into 1-inch balls and place them on the prepared baking sheet, spacing them about 1 inch apart.
• Step 4: Bake the spinach balls for 18-20 minutes, or until they are golden brown and crispy on the outside.
• Step 5: Remove the spinach balls from the oven and let them cool for a few minutes before serving.
