Ingredients
• 4 medium sweet potatoes
• 1 tablespoon olive oil
• 1 cup cooked black beans, rinsed and drained
• 1/2 cup shredded cheddar cheese
• 2 tablespoons chopped fresh cilantro
• 1/4 cup diced red onion
• 1 avocado, diced
• 1 tablespoon lime juice
• Salt and pepper to taste
Instructions
• Step 1: Preheat your oven to 400°F (200°C). Wash the sweet potatoes and prick them several times with a fork. Place the sweet potatoes directly on the oven rack and bake for 45-55 minutes, or until they are tender when pierced with a fork.
• Step 2: Remove the sweet potatoes from the oven and let them cool for 5-10 minutes. Slice each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato attached to the skin.
• Step 3: In a medium bowl, mash the scooped-out sweet potato flesh with the olive oil until smooth. Stir in the black beans, cheddar cheese, cilantro, and red onion. Season with salt and pepper to taste.
• Step 4: Spoon the filling back into the sweet potato skins, dividing it evenly among the 8 halves. Bake the stuffed sweet potatoes for an additional 10-15 minutes, or until the cheese is melted and the filling is heated through.
• Step 5: Top the stuffed sweet potatoes with diced avocado and a drizzle of lime juice just before serving.
