Ingredients

• 4 cups fresh corn kernels (from about 6 ears of corn)
• 1 red bell pepper, diced
• 1 yellow bell pepper, diced
• 1 pint cherry tomatoes, halved
• 1 red onion, thinly sliced
• 1/4 cup olive oil
• 3 tablespoons red wine vinegar
• 2 tablespoons fresh lime juice
• 1 teaspoon honey
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 2 tablespoons chopped fresh cilantro (optional)


Instructions

• Step 1: In a large bowl, combine the fresh corn kernels, diced bell peppers, halved cherry tomatoes, and thinly sliced red onion.
• Step 2: In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, honey, salt, and black pepper until well combined.
• Step 3: Pour the dressing over the corn and vegetable mixture and toss gently to coat everything evenly.
• Step 4: Garnish the salad with chopped fresh cilantro, if desired.
• Step 5: Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld together. Serve chilled or at room temperature.
