Ingredients

• 3 large cucumbers, sliced into thin rounds

• 1 teaspoon sesame oil
• 1 teaspoon honey
• 1/4 teaspoon ground ginger
• 1 tablespoon toasted sesame seeds (optional)


Instructions

• Step 1: In a large bowl, combine the sliced cucumbers, shredded carrots, sliced red onion, and diced red bell pepper.
• Step 2: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, and ground ginger until well combined.
• Step 3: Pour the dressing over the vegetables and toss gently to coat evenly.
• Step 4: Sprinkle the toasted sesame seeds over the salad, if desired.
• Step 5: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
