Ingredients

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large bowl, beat the eggs and granulated sugar together using an electric mixer or stand mixer fitted with the whisk attachment. Beat on high speed for about 5-7 minutes, or until the mixture is light, fluffy, and forms ribbon-like trails when the beater is lifted.
  3. In a separate bowl, sift together the all-purpose flour, cornstarch, and salt.
  4. Gently fold the dry ingredients into the egg mixture, being careful not to overmix. Pour the batter into the prepared jelly roll pan and spread it evenly using a spatula.
  5. Bake for 10-12 minutes, or until the cake is golden brown and springs back when lightly touched.
  6. Immediately after removing the cake from the oven, run a knife around the edges to loosen it. Carefully flip the cake onto a clean, damp kitchen towel dusted with powdered sugar.
  7. Carefully peel off the parchment paper. Starting from the short end, tightly roll up the cake with the towel, creating a spiral shape. Allow the rolled cake to cool completely on a wire rack.
  8. In a medium bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Carefully unroll the cooled cake and spread the whipped cream evenly over the surface. If desired, add a layer of your favorite jam or preserves on top of the whipped cream.
  10. Gently reroll the cake, removing the towel as you go. Slice and serve chilled, dusting with additional powdered sugar if desired.
