Ingredients
• 1 green papaya, shredded or julienned
• 2 tablespoons fresh lime juice
• 2 tablespoons fish sauce
• 1 tablespoon palm sugar or brown sugar
• 1 clove garlic, minced
• 1-2 Thai chili peppers, thinly sliced (optional)
• 1/4 cup chopped fresh cilantro
• 1/4 cup chopped fresh mint
• 2 tablespoons roasted peanuts, chopped
Instructions
• Step 1: Using a julienne peeler or a sharp knife, shred or julienne the green papaya into thin, long strips. Place the shredded papaya in a large mixing bowl.
• Step 2: In a small bowl, whisk together the lime juice, fish sauce, and palm sugar until the sugar has dissolved. Pour the dressing over the shredded papaya and toss to coat evenly.
• Step 3: Add the minced garlic, sliced Thai chili peppers (if using), chopped cilantro, and chopped mint to the salad. Gently toss to combine all the ingredients.
• Step 4: Top the salad with the chopped roasted peanuts just before serving.
