Instructions
• Step 1: In a large salad bowl, combine the chopped romaine lettuce, shredded red cabbage, shredded carrots, and sliced red bell pepper.
• Step 2: Add the cooked and shredded chicken (or tofu), chopped fresh cilantro, and chopped green onions. Toss gently to mix.
• Step 3: In a small bowl, whisk together the peanut dressing ingredients: 1/4 cup creamy peanut butter, 2 tablespoons lime juice, 2 tablespoons soy sauce, 1 tablespoon honey, 1 teaspoon grated ginger, and 2 tablespoons warm water. Adjust seasoning to taste.
